What's involved in converting an old L16/18 carby engine to this EFI system I keep hearing about, and what's it worth?

Whats involved? Thats a big question mate!
Each job will be different, especially if you are trying to do it cheaply. Our setup is cheaper and easier again as we dont have to worry about vaccum for a brake booster, polution gear, EGR etc.

EFI hardware:
Manifold/injectors/plenum. We picked up an L18 factory single throttle body from the classifieds for $150 with a pulsar throttle body already mounted. There is a bit of mucking about to get it onto a non EFI head - but it is possible. The intake ports need to be notched for the injectors, and the stud pattern on the manifold is different as well. If just took time and some careful planning to get it on.

Fuel line hardware:
Youll need a lift pump to get fuel to a swirl pot, then a decent fuel pump (VL Commodore Turbo or similar) to pressurise the line. Youll also need to put in a regulator on the fuel rail after the injectors and a return line installed that goes from the reg back to the tank. Dont know whats normal mounting etc for a dato - but we run all 3/8 lines.

Electronics:
You'll need an ECU, loom, sensors. IF you buy off the shelf often all this stuff comes with the ECU. I know a bit about motec as I have a mate who is the largest dealer in AUS and you can buy alot of extra sensors etc from motec. Not sure about others though.

This is mostly for fuel only injection - bit of a waste if you want to do the job properly. If you have the budget for ign as well then do it! Multi coil sequencial.... So much easier to get the max performance from your engine.

Cost? depends on what sort of quality you want - ours so far has probably cost us about $500 - but there is still alot to go. we already had a swirl pot for our carb setup (gets a bit rough in offroad!) with return lines to the swirl pot and tanks which makes it a bit cheaper for us. We'll probably get away with it for $1200 not including tuning. When the motec goes on is when it'll get expensive!

There are a heap of sites that detail EFI conversions for existing carb engines - do a google search. Hopethis info helps!
